Halloween cookie recipe

Ingredients 

160g butter, softened 

100g brown sugar

50g caster sugar

1tsp vanilla extract

1 large egg

¼ tsp baking powder

250g plain flour 

100g of chocolate chips

Drops of red/green food colouring

To decorate

Edible eyes 

60g Icing sugar mixed with 2 tsp water

60g milk chocolate melted down

Method

  • Heat the oven to 160C (fan) and line your sheets with baking paper. Start by heating up your butter in the microwave for a few seconds until soft, then mix in the brown and caster sugar with a whisk. 
  • Add in the egg, vanilla extract, flour, and baking powder with a wooden spoon until the dough is stiff. 
  • Sprinkle in the chocolate chips and separate the dough (I like to separate into 3 parts) one with no colouring, one with 2 tiny drops of green food colouring and one part with 2 tiny drops of red food colouring. 
  • Once separated then divide into 20 pieces and roll into balls and press down to create cookies, (this might take a few batches as they spread out). Cook for 10-12 mins until golden. Leave to cool for 10 mins before decorating. 
  • To decorate: spoon the melted chocolate into a piping bag and decorate spiders on to the plain cookies, use the edible eyes.
  • To decorate the red and green cookies, get creative and either throw in the edible eyes all over to create monster cookies, or use the icing sugar to decorate into cobwebs and the melted chocolate to create spiders.
